Ingredients
  

  • 1/3 cup tahini
  • 1/2 cup loosely packed fresh parsley
  • 1/4-1 /3 cup water
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 1-2 tsp maple syrup (or honey if not vegan)
  • 1/2 tsp sea salt
  • 1 large clove garlic, peeled and smashed
  • 1 stalk green onion, ends trimmed and cut into 1-inch pieces

Method
 

  1. Combine 1/3 cup tahini, 1/2 cup fresh parsley, 1/4 cup water, 3 Tbsp lemon juice, 2 Tbsp olive oil, 1-2 tsp maple syrup, 1/2 tsp sea salt, 1 large smashed garlic clove, and 1 stalk of green onion in a high-speed blender.
  2. Blend all ingredients until completely smooth, stopping to scrape down the sides of the blender as needed to ensure an even consistency.
  3. Taste the tahini sauce and adjust the seasoning. Add more lemon juice for brightness, maple syrup for sweetness, or garlic for a spicier kick.
  4. If a thinner consistency is desired, add the remaining water (up to 1/3 cup total) 1 tablespoon at a time, blending after each addition until your preferred texture is reached. Serve immediately or store.

- For optimal blending, ensure your tahini is well-stirred in its jar before measuring.
- Adjust the water content gradually to achieve your desired thickness; a thinner sauce for drizzling, thicker for dipping.
