Ingredients

  • 1 tbsp Butter
  • 2 cloves Garlic, minced
  • 1/3 cup Mayonnaise
  • 1/3 cup Heavy cream
  • 5 oz Blue cheese, crumbled
  • 1 tsp Worcestershire sauce
  • 1 tsp Lemon juice
  • 1/4 tsp Black pepper

Method

  1. Melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  2. Reduce the heat to low. Stir in the mayonnaise, heavy cream, crumbled blue cheese, and Worcestershire sauce. Heat for 2-3 minutes, mashing the blue cheese against the bottom and sides of the pan with a spoon, just until warm. Be careful not to overheat, or the sauce may split.
  3. Remove from heat. Stir in the lemon juice. Season with black pepper to taste.

Notes

- Use a good quality blue cheese for the best flavor; varieties like Gorgonzola or Roquefort work wonderfully.
- To prevent the blue cheese sauce from splitting, keep the heat on low and avoid rapid boiling. Gentle warming is key.
- For a smoother sauce, you can briefly blend it with an immersion blender before serving. Ensure it's not too hot before blending.
- Store leftover blue cheese sauce in an airtight container in the refrigerator for up to 3-4 days.
