Ingredients
  

  • 3 pounds apples (peeled, cored, and chopped, about 6 medium)
  • cup water
  • 2 tablespoons granulated sugar (or to taste)
  • ½ teaspoon cinnamon
  • 1 tbsp fresh lemon juice
  • pinch nutmeg

Method
 

  1. Combine apples, water, granulated sugar, and cinnamon in a large saucepan. Bring the mixture to a boil over medium-high heat, then reduce to a low simmer and cover.
  2. Cook for 15-20 minutes, or until the apples are very tender. Remove the lid and continue to simmer for an additional 5 minutes to thicken. Add the fresh lemon juice and a pinch of nutmeg.
  3. For chunky applesauce, mash directly in the pot with a potato masher. For smooth applesauce, blend until desired consistency is achieved.
  4. Taste and adjust sugar or cinnamon as needed. Serve warm, or chill before serving.

- Choose a mix of sweet and tart apples like Fuji, Gala, Honeycrisp, and Granny Smith for the best flavor balance. - If I find my applesauce is too thin, I often let it simmer uncovered for an extra 5-10 minutes to reduce more liquid and achieve a thicker consistency without adding starch.
