  • 1 tablespoon cornstarch
  • 1 cup water
  • 3 tablespoons butter
  • 1/2 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice

Method
 

  1. In a double boiler, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens to a sauce consistency.
  2. Remove the double boiler from the heat. Stir in the butter, grated lemon rind, and fresh lemon juice until the butter is fully melted and incorporated.
  3. Serve the sauce hot over your favorite desserts, or chill it in the refrigerator for later use. It will thicken further as it cools.

- For an extra smooth sauce, strain it through a fine-mesh sieve after cooking to remove any lemon zest pieces or cornstarch lumps.
- If your sauce seems too thin, return it to the double boiler and cook for another minute or two, stirring constantly. If it's too thick, whisk in a teaspoon of hot water or lemon juice until desired consistency.
