Ingredients
  

  • 3/4 cup plain full-fat Greek yogurt
  • 1/4 preserved lemon (pulp discarded, peel thoroughly rinsed and finely minced)
  • 2 teaspoons preserved lemon juice from jar
  • 2 tablespoons chopped cilantro
  • 1/2 teaspoon salt
  • 1/8 teaspoon sugar

Method
 

  1. Combine all the ingredients in a medium bowl.
  2. If you prefer the consistency a little thinner, add a little more of the preserved lemon juice.
  3. If you prefer slightly less tang, add another pinch of sugar.
  4. Refrigerate for at least one hour before using.
  5. Store in the fridge in a non-reactive container or jar. Will keep for 3-4 days.

Notes

- For the best flavor, allow the preserved lemon sauce to chill for at least an hour. This lets the flavors meld and deepen. I once served it immediately and felt it lacked depth, so don't skip the chill time.
- When mincing the preserved lemon peel, ensure it's very fine to avoid large, overly salty chunks. Thoroughly rinsing the peel before mincing helps reduce excessive saltiness.
